The version of minestrone that was my favorite was made with by my grandmother with turnips and kale… my mother always added spicy Italian sausage and substituted finoccio for celery.
I made this today – it is so delicious. I took two minutes off my pasta time and it cooked perfectly. I also cooked the potato for around 12-15 mins before adding the pasta, rather than the suggested five 🙂
